Calling All Pesto & Salsa Artists!

Lyndon Virkler and his team at the New England Culinary Institute have put together a few guidelines for pesto and salsa contests for the Third Annual Growing Local Fest.  Please note the larger quantities and the opportunity to combine less conventional local ingredients in each category. Good luck!

Anything Goes Pesto Contest:

– Bring 16 oz. of pesto to the event by 3:00 PM

– Any and all pestos welcome, must include a complete list of ingredients. Main ingredients must be LOCAL.

– Bread will be provided for tastings.

– Appropriate ingredients would include some type of herbs/greens, nuts, cheese.  Flavor should be characteristic of the main ingredient and have good balance.

– Prizes for first, second, and third place.

Some Like it Hot (and Some Don’t) Salsa Contest:

– Bring 1 Qt of Salsa to the event by 3:00pm

– Any and all salsas welcome (from mild to hot). Must include a complete list of ingredients. Main ingredients must be LOCAL.

– Tortilla chips will be provided for tastings.

– Appropriate ingredients could  include fruit or vegetable base. Texture can range from chunky to coarse puree. Should be “scoopable”.

– Flavor should be balanced.

– Prizes for first, second, and third place.
